Coming up with fun, healthy meal ideas for kids can be more challenging than you think! To help you out, we have come up with a few fun, healthy meal ideas that are easy to make and something your kids will love!

Zucchini Grilled Cheese

Ingredients: 

  • 2 cups grated zucchini
  • 1/2 cup freshly grated parmesan
  • 1 large egg
  • 1/4 cup cornstarch
  • Kosher salt
  • Black pepper – freshly grounded
  • 2 cup shredded cheddar
  • Vegetable oil

Method

  1. Using a kitchen town, squeeze out excess moisture from the grated zucchini. Using a medium bowl, combine the zucchini with egg. Add parmesan, cornstarch, and green onions. Once mixed, add salt and pepper to taste. 
  2. Take a large skillet and layer on some vegetable oil. Create scoops of the mix that are about 1/4 cup size, and create small squares. Keep making as many zucchini patties as possible.
  3. Cook the zucchini patty from both sides until lightly golden brown, and place them on a paper towel to drain. 
  4. Wipe the skillet and place two zucchini patties in one skilled – medium heat. Top both sides with shredded cheese, and put on zucchini patties on top. Creating a zucchini grilled cheese sandwich. Cook at medium heat while flipping sides. 

Mini Pepper Pizza

Ingredients: 

  • 4 large bell peppers – halved and cored
  • 1 tablespoon extra virgin olive oil
  • Black pepper – freshly grounded
  • Kosher salt
  • 1/2 cup pizza sauce
  • 2 cups of shredded mozzarella
  • 1/2 cup finely grated parmesan
  • 1/3 cup mini pepperoni
  • 1 tablespoon chopped parsley

Method: 

  1. Preheat your oven at 350 for 10 to 15 minutes. On your oven tray, set on a baking sheet, and drizzle your peppers with olive oil, salt, and pepper.
  2. Using a large spoon, layer on some pizza sauce, and sprinkle it with mozzarella, parmesan, and pepperoni. Bake them in the oven for 10 to 15 minutes at 150 degrees celsius. Or until the peppers are crisp and the cheese is melted.
  3. Garnish with parsley and serve them up!

Ham Egg & Cheese Roll-Ups

Ingredients

  • 5 large eggs
  • 1 teaspoon garlic powder
  • Kosher salt
  • Black pepper – freshly grounded
  • 2 tablespoon butter
  • 1 cup shredded cheddar
  • 1/2 cup baby spinach
  • 1/2 cup chopped tomatoes
  • 10 slices ham

Method:

  1. Start by heating the broiler. In a large bowl, crack all the eggs and whisk together. Top with garlic powder, and season using salt and pepper.
  2. Place a large non-stick over medium heat, and melt some butter. Add the eggs to the pan and scramble them by stirring them occasionally. It should take about 3 minutes for your eggs to be done. Then stir in cheddar, baby spinach, and tomatoes. Make sure all the ingredients are combined well.
  3. Using your cutting board as a serving station. Place two slices of ham, and top it with a spoonful of your scrambled mix. Roll them up and keep repeating until you have 10 ham rolls.
  4. Place them in a shallow baking dish and crisp the ham up in the oven for 5 minutes. 

Ground Turkey Bolognese

Ingredients

  • 1 pound angel hair pasta
  • 1 tablespoon extra virgin olive oil
  • 1 large onion – finely chopped
  • 1 large carrot – peeled and chopped
  • 1 celery stalk – chopped
  • 3 cloves of garlic – minced
  • Kosher salt
  • 1 pound ground turkey
  • Black pepper – freshly grounded
  • 1 28 punches of crushed tomatoes (can) 
  • 1/2 cup dry red or white wine
  • 1/4 cup chopped parsley
  • 2 teaspoon dried oregano
  • Freshly grated parmesan – garnish

Method: 

  1. In a large pot of boiling water (salted), cook your pasta following the box’s directions. Once cooked, drain and return them to the pot.
  2. Make your bolognese in a larger pot by heating oil over medium flames. Once hot, add onion, carrot, celery, and garlic. Cooke it over medium heat until they are tender. Add ground turkey, and cook until turkey is no longer pink. Once cooked, season with salt and pepper to taste.
  3. Add crushed tomatoes, parsley, oregano, and wine. 
  4. Let the bolognese simmer until it thickens – 10 to 15 minutes.
  5. Toss with pasta, and garnish using parmesan.
